Toddler Eats: Acai Bowls


I have been experimenting with different breakfast recipes since Emerson decided she doesn't like eggs. I tried eggs every which way, scrambled, hard-boiled, omelets, quiches and she won't take anything! Her breakfast of choice has been waffles and syrup so in attempt to get something nutritious in her belly I tried my acai bowl recipe on her and it was a winner!

It is a simple and easy breakfast I make myself when I am crunched for time, practically every morning with a toddler! I use the Sambazon Acai Berry Superfruit Pack which you can get at Costco or most grocers in the freezer section. The bowls are ready in three easy steps:

  1. Run one packet under hot water for about 10 seconds. Open pack and drop it into the blender.

  2. Add liquid of your choice. I prefer organic coconut water. I also added a banana and some chia seeds for a thicker consistency.

  3. Blend, drop into a bowl and add toppings of your choice.

For Emerson's and my bowls I added strawberries, bananas,blueberries, and granola. Result was a happy toddler and happy mama!
